Olive Oil Cake

  • Kitchen Aide Mixer/mixer



  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup olive oil
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/4 tsp lemon juice or lemon zest
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Cake Topping

  • 2-3 tbsp Powdered Sugar (optional)
  • 1-2 tsp olive oil (optional)


  • Preheat oven to 350 degrees. Grease baking pan.
  • Combine eggs and sugar. Gradually add olive oil, milk, and extracts. Mix in mixer until well combined.
  • In a separate bowl. Whisk together dry ingredients; flour, baking powder, and salt.
  • Gradually add the dry ingredients into the wet ingredients and mix well until well combined. Be careful not to over mix the mixture.
  • Pour into greased pan, and bake for 35-40 minutes, or until the cake is done.
  • Sift the cake with powdered sugar (optional) or brush the cake with olive oil.
  • Enjoy!
