Running out of potato recipes? Well, this recipe is just for you! These Twice-baked potatoes are so easy to make and they taste absolutely amazing. They are so fluffy loaded with sour cream, bacon, and green onions as well as cheese!

These twice-baked potatoes are so fun to make, and it’s not your boring potato recipe. What I most love about these is you can really customize them however you want, thus making it such a great dish for everyone to enjoy at the dinner table!

Ingredients for twice-baked potatoes

  • 8-10 medium-sized yellow potatoes
  • olive oil
  • salt
  • 1/2 cup heavy whipping cream
  • 1 tbsp sour cream
  • 1 cup cheddar cheese (freshly grated)
  • 2 tbsp softened butter
  • 1 tbsp green onions
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 garlic powder or garlic salt

Toppings –

  • 2 tbsp green onions (optional)
  • 4 strips of cooked bacon cut into tiny pieces
  • extra cheese

How to make twice-baked potatoes

The first step is preparing the potatoes. You will need about 8-10 potatoes. I prefer the golden potatoes. In fact, I use them for everything.

Wash the potatoes, and dry them out with a paper towel. There are several different ways to make the first part. Just depending on how much time you have on hand, but you can either microwave them, boil them, or bake the potatoes.

To microwave –

Add 1 -2 tbs of olive oil and salt to the potatoes. Microwave for about 5 minutes or until you can pierce a fork through the potatoes.

To boil –

Boil whole potatoes for about 15-20 minutes or until you can pierce a fork through the potatoes.

To Bake –

Wrap each individual potatoes in tin foil and bake at 400 degrees for about an hour to an hour and a half checking in between to make sure the potato is fully cooked.

Once the potatoes are cooked make sure to cool for about 10 minutes, before proceeding to the next step.

Preparing the filling –

Once the potatoes have cooled down, slice all the potatoes in half. Scoop the inside of the potatoes leaving about 1/4. You want to still make sure there are potatoes in the shells so it holds its shape.

Combine the insides of the potatoes, heavy cream, sour cream, cheddar cheese, butter, green onions, and seasonings. Mix until well combined. Scoop this mixture back into the potato shells.

Top with bacon, and extra cheese.

Bake at 350 degrees for about 15-20 minutes, and enjoy!

What can you serve twice-baked potatoes with?

Steak is the best thing you can serve these twice-baked potatoes with! I would say that’s hands down my favorite dish I would serve the potatoes. Also grilled chicken or anything grilled is so amazing with this recipe. A great Caesar salad would go well too!

Can I reheat twice-baked potatoes?

Yes absolutely. These are great for left overs for the next 4-5 days.

To reheat pop them into the oven until warm, or microwave them. Whatever works best for you.

They are also fridge and freezer friendly.

To freeze or refrigerate, prepare the potatoes but do not add the toppings, and bake them. Seal the potatoes tightly, and once you’re ready to eat them then add the toppings, and bake them!


A few suggestions to perfection –

1. If you want the filling to be nice and fluffy try using a hand mixer to mix the potato filling.

2. boiling the potatoes is my favorite way to prepare this recipe. I highly recommend this method.

3. Do not let the potatoes cool completely, before scooping out the filling. Allow them to cool only about 10 minutes, and then scoop the filling out. You want to work with warm/hot potatoes to get that filling out.

4. My personal choice for potatoes are the golden potatoes, next time try them out.

5. May add additional seasoning or toppings to your own personal taste, there are no limits!

Topping

  • 1-2 tbsp cheese
  • 4 strips cooked bacon (cut up into tiny pieces)

Instructions 

  • 1. In a large pot, boil potatoes for 15-120 minutes or until you can pierce a fork through (this determines if potatoes are done). See blog post for other options to cook the potatoes.
  • 2. Once potatoes are done cool for about 10 minutes, (do not let the potatoes cool completely, you want to work with warm/hot potatoes to be able to scoop the flesh out)
  • 3. Scoop the inside of the potatoes out leaving about 1/4 inch of the potato. Transfer the inside of potatoes to a medium bowl.
  • 4. To the medium mixing bowl also add heavy cream, sour cream, cheese, butter, and seasonings., and don't forget the green onions too. You may also add your additional toppings to this part.
  • Mix until well combined.
  • Scoop back into the potatoes shells. Add extra cheese.
  • Bake at 350 degrees for about 20 minutes. Add toppings (optional)
