Whats inside the Olive Oil Cake?

What’s inside this cake you may wonder. The ingredients are quite simple but what really makes up this cake is olive oil, sugar, and vanilla extract as well as lemon juice or lemon zest! And let’s not forgot about the powder sugar used to top it off! I promise it does not taste as sweet as it may sound. If you are not a person who likes sweets typically, this is it! This is the cake you will always want!

What does Olive Oil Cake taste like?

This cake is sooo moist and super tender. The cake is slightly sweet in taste. You’d be surprised how simple this cake, yet it is sooooo yummy.

My husband and I are actually not really big fans of sweets but when I made this cake, it was all gone by the next morning! If I have not convinced you yet, I hope this did it for you!

Ingredients for Olive Oil Cake-

  • 3 Large Eggs
  • 1 cup of sugar
  • 1/2 cup olive oil
  • 1/2 cup milk
  • 1/2 tsp vanilla extract
  • 1/4 tsp lemon zest or lemon juice (or more)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt

Cake topping

  • Olive Oil or Powdered Sugar

How to make Olive Oil Cake

  1. Preheat oven to 350 degrees. Position rack to the third level
  2. Grease baking pan. I used a pie pan, but really any baking pan works great, (Note baking time can vary if using different baking pans).
  3. Combine eggs and sugar in a standard mixer, mix on slow speed for about 30 seconds to a minute until combined.
  4. Slowly add olive oil, milk, and extracts. Mix in the mixer until combined.
  5. In a separate mixing bowl, combine flour, baking powder, and salt.
  6. Take the dry mixture, and gradually add it to the wet mixture. Make sure the mixing speed is on low. This makes sure the dry ingredients don’t fly all over the place. You don’t want to create a mess!
  7. Once all the ingredients are combined, pour the cake batter into the greased baking pan.
  8. Bake for about 35-40 minutes or until the cake is done. I like to check with a toothpick to make sure there is nothing sticking to it, which indicates the cake is done.
  9. Brush extra olive oil on the cake or add powdered sugar as I did. I personally did not think added powdered sugar made the cake any sweeter. In fact, it turned out perfect!

Note: Do not open the oven during the baking process. This can cause the cake to not come out perfectly round.

What type of olive oil should you use?

I like to use high-quality extra virgin olive oil. I recommend using the best olive oil you have since this is what really makes up the cake.

What can you serve Olive Oil Cake with?

This cake serves perfectly with fruits. I would also eat this cake with either a glass of milk or sweet tea, hot or cold. I think this cake is also the perfect dessert for hosting. It’s simple and looks esthetically pleasing.

How long does this cake last after baked?

This cake lasts up to 3 days for the best results. I would cover this cake with either tin foil or clear wrap so it does not taste dry! Store at room temperature.


A few suggestions to perfection –

  1. Use high-quality olive oil
  2. Top it off with powdered sugar!
  3. If the cake does not come out perfectly flat but comes out with a little hill, I recommend cutting it off, and the powdered sugar will cover up the top part. You wouldn’t tell the difference!

Ingredients

Cake

  • 3 large eggs
  • 1 cup sugar
  • 1/2 cup olive oil
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/4 tsp lemon juice or lemon zest
  • 1 1/2 cups all-purpose flour

Cake Topping

  • 2-3 tbsp Powdered Sugar (optional)
  • 1-2 tsp olive oil (optional)

Instructions 

  • Preheat oven to 350 degrees. Grease baking pan.
  • Combine eggs and sugar. Gradually add olive oil, milk, and extracts. Mix in mixer until well combined.
  • In a separate bowl. Whisk together dry ingredients; flour, baking powder, and salt.
  • Gradually add the dry ingredients into the wet ingredients and mix well until well combined. Be careful not to over mix the mixture.
  • Pour into greased pan, and bake for 35-40 minutes, or until the cake is done.
  • Sift the cake with powdered sugar (optional) or brush the cake with olive oil.
  • Enjoy!
