This mashed cauliflower recipe is so good that you will forget all about regular mashed potatoes. This recipe is very low on carbs, but huge on flavor. You’ll absolutely love how easy this dish is to make compared to regular mashed potatoes. Mashed cauliflower may not be for everyone, the only way to find out if you’ll love this dish is to try it out!

There are so many recipes out there for mashed cauliflower, however, this is my personal favorite. It’s pretty much the same ingredients you would use to make traditional mashed potatoes except we are using cauliflower.

I personally think the more butter in this recipe the better it tastes! No judgment here but I do love my butter!!

For this recipe, I highly encourage you to taste the recipe before serving just to make sure there is the perfect amount of seasoning in the dish and trust me you will be able to tell.

Ingredients for mashed cauliflower

  • 1 cauliflower head
  • 4 tbsp soften butter
  • 3/4 cup whole milk
  • 1 tsp salt
  • 1 tsp pepper

How to make mashed cauliflower

  1. Cut cauliflower head into smaller pieces and rinse thoroughly.
  2. Add cauliflower to a medium-sized pot, and fill the pot with water.
  3. Boil about 15 minutes or until the cauliflower is soft. I will then turn the heat off drain the water completely.
  4. Let the cauliflower sit in a strainer for about 3-5 minutes to make sure all the extra water is out. This will make sure your mashed cauliflower doesn’t turn out super watery.
  5. Be sure to work with warm cauliflower don’t let it cool completely.
  6. Add cauliflower to a food processer, add milk salt, and pepper to taste.
  7. Mix until well combined, and be careful not to overdo it, however, this is my personal preference. I like to have some chunks in mine.
  8. Serve warm for best results.

What can you serve mashed cauliflower with?

Steak is the best thing you can serve this mashed cauliflower with! I would say that’s hands down my favorite personal favorite. I see these as a healthier alternative for mashed potatoes. So anything you serve mashed potatoes with, be sure to try mashed cauliflower next time!

Can I reheat mashed cauliflower?

Personally, I do not think so. I feel like this is a dish made to be consumed the same day. If you try to reheat these the next day it kind of has a cabbage smell and that personally bothers me. I would cut this recipe in half that way you will consume everything the same day.


A few suggestions to perfection –

1. Allow cauliflower to sit in the strainer for a couple of minutes to make sure all the water is out. You do not want watery mashed cauliflower.

2. Boiling is my preferred method to prepare this dish, how ever steaming is also a great alternative.

3. Work with warm cauliflower, do not let cool completely. After all you do not want to eat cold food.

4. Serve immediately, this recipe is not ideal for leftovers.

5. May add additional seasoning or ingredients to your own personal taste, for example, parmesan cheese, cooked minced garlic, cream cheese, sour cream there are no limits!

  • 1 cauliflower head

Instructions 

  • Separate cauliflower into florets and chop up into smaller pieces.
  • Rinse throughly in cold water.
  • Add into a medium sized pot and boil for about 15 minutes or until soften.
  • Drain water from cauliflower and let sit for a couple of minutes for all excess water to come out.
  • Combine cauliflower, milk, softened butter, salt and pepper in a food processer. Mix until desired consistency.
  • Serve with chopped parsley or green onions on top.
